Description: An aquatic plant with deep green arrowhead-shaped leaves, protrude from water or lie flat like a lily pad. Stalk is single stem, with fruit bearing from lateral spikes in the form of round heads of flat seeds. Root fiber spreads directly from the tuft of leaves and range some distance in the shallow mud from the parent plant. Small potato-like tubers form on rootstocks late fall. Flowers, waxy, white, borne in whorls of 3 near end of stem. Throughout U.S. in moderate altitudes, wet ground, shallow water, marshes, ponds, edges of lakes, or slow streams.

Edible: Entire root is edible, usually only tubers are worth collecting. Need to be roasted or baked to remove stinging properties. Prepare as you would potatoes, bake or mash into cakes, dry for future use.
