SULPHUR SHELF MUSHROOM
(Polyporus sulphureus also Laetiporus sulphureus) chicken-of-the-woods

Description: A fungi with fan-like caps with yellow pores, rather than gills, on the lower surfaces. Grows in large clusters or in layers, with caps overlapping each other. Caps measure 6-8 in. across, firm and fleshy. Fruiting body is yellow and orange, sometimes creamy in part. Attached to the tree by a tough base. Throughout country in temperate regions found on deciduous, dying or dead trees in late summer, autumn.

Edible: Use as a vegetable, fresh or frozen. Discard any worm-eaten parts, make sure you are using only the tender parts of the caps, which may be only the edges. Discard any woody parts. They will never cook up tender. If clean wipe off with cloth or quickly wash and pat dry. Add to any recipe calling for mushrooms.
