Amaranth
(Amaranthus retroflexus)

Description:
A coarse, annual weed with stout stems. There are numerous
species. The taproot is red with a stout, hairy stem, 2-5
feet tall. Leaves are dull, long-pointed with wavy edges
and rough to the touch. Greenish flowers grow in clusters
on tall bristly stalks. The black seeds mature in the fall.
A common weed found in wastes ground, fields, roadsides,rich
cultivated areas from coast to coast below 9,000 feet.
EDIBLE,
Medicinal: The leaves, stems and seeds are used. The
young plants can be used raw, in salads or boiled about
15 minutes to make a mild pot-herb. The abundant, shiny
seeds make a nutritious flour. Parch for an hour, then grind.
Taken internally it is used for an astringent, which helps
in diarrhea, excessive menstruation. A wash can be made
to help in skin problems. Used as a gargle for mouth and
throat irritations. Take the tea cold, 1-2 cups a day or
1/2 to 1 teaspoon of the tincture.
