BULRUSH
(Scirpus species)


Description: Stems, triangular in some species, round in others. Seeds in clusters and found just below the tip of the plant. Plants up to 7 ft. tall. Found in wet ground, on swamp, pond and lake edges throughout the west. .

EDIBLE: Starchy rootstocks, when dried. Seeds ground into a nutritious white flour for making a good bread, mush. Seeds eaten whole or parched. Young shoots, just emerging from the mud, good raw, cooked. Crushed and boiled, yields a sweet syrup. Pollen, gathered and pressed into cakes and baked are tasty. Base of the stem next to the ground are thirst quenching. Long leaves are useful materials for making sandals, baskets and mat- weaving.
