CHICORY
(Cichorium intybus)
wild sucory, garden endive
Description:
Perennial, resembles leaves of dandelion, but stem is branching
and stiff. Deep taproot has toothed base leaves and 2 blue, white
or pink sessile flowers in the leaf joints. Upper leaves, small,
clasping with basal lobes, entire margins. Throughout North America
in plains, waste places, open fields and roadsides.
EDIBLE-MEDICINAL:
Leaves used for potherb, rich in iron, calcium, copper, vit. A,
C. Flowers used to garnish salads, buds pickled. Young root, steamed,
dried, roasted and used as substitute for coffee or mixed with
coffee to counteract its stimulant effect. Roots, edible raw,
better boiled to a brown color. Medical actions are similar to
Dandelion being a tonic, laxative and diuretic.
