CHOKE CHERRY
(Prunus virginiana)

Description: Deciduous, small shrub-like tree or shrub. Bark, brown to reddish-brown . Leaves oval to oblong-oval, tapering at the ends. Numerous creamy white flower clusters on a long stem. Egg-shaped fruit, deep red to dark purple, maturing in late summer to autumn. Found throughout U.S. in open woods, on prairies, hillsides, canyon sides and stream banks.

EDIBLE: Fruit, edible raw, sour before ripe. Cooking or drying removes sourness. Preserve fruit by partially drying, mash and form into cakes for final drying, store and cook just before eating. A delicious syrup, jelly or jam made from the fruit. Inner bark is sometimes used as a tea to check diarrhea. CAUTION: Leaves and pits contain a cyanide toxin,which can be deadly, but expelled when dried or cooked.
