Description: Perennial, to 4 ft.tall. Plant forms a large, yellow storage root and mass of feeder roots underground. Roots produce buds from which grow large leaves and long, thick leafstalks, a favorite for pies and sauces. Greenish-white flowers at the end of a central stalk are borne in numerous, dense, panicled clusters. North America, cultivated in gardens.

POISONOUS: A dangerous garden plant because of the lethal amounts of oxalic acids in leaf blades. Eating only a small amount of a blade has caused painful poisoning. Death has also occurred from eating fried blades. Oxalic acids crystallize in the kidneys, damaging them severely. Other symptoms include headache, backache, difficult breathing, internal bleeding, convulsions and coma.
